Cheesepocalypse? The short-term Velveeta cheese shortage happening at some East Coast stores doesn't have to interrupt prime dipping season ahead of the Super Bowl and Sochi Winter Olympics.

USA TODAY Network offers four recipes to avoid a cheesy meltdown.

1. Homemade Velveeta cheese

It's probably better for you, anyway.

America's Test Kitchen has a recipe for homemade Velveeta cheese. The ingredients include shredded Colby cheese, whole milk, whole milk powder and gelatin, and is molded in block form in a pan.

Another recipe, by Laura Fuentes of the Momables blog, uses a combination of American and cheddar cheeses.

2. A fancy cheese dip - sans Velveeta

This herbed goat cheese mousse recipe from John Besh's Cooking From the Heart uses cream and fresh goat cheese. Any soft goat cheese or ricotta would work with this recipe.

3. A (healthier) cheese dip

This Gorgonzola and chive dip uses reduced fat ingredients, and uses cream cheese and Gorgonzola as its cheese base.

4. A cheeseless cheese dip

Instead of cheese, this dip from the Vegan Yumminess blog uses mashed potatoes and carrots as substitutes.
